To configure ESPHome for use with the PIR sensor, use a GPIO Binary Sensor. It can detect if a pin is pulled HIGH/LOW and reports those values to Home Assistant. Optionally also set a device_class so that Home Assistant uses a nice icon for the binary sensor.
Binary sensors are similar to other sensors in that they monitor the states and conditions of different entities. Where binary sensors differ is they can only return one of two mutually exclusive values.
